Raw Chocolate Coated Ginger Biscuit bites.

No more guilty snacking...



So, recently I started (again) to eat a lot healthier, I am trying to eat fully raw, as I feel that I am in need of a detox.

But I knew that I would miss snacks like chocolate, and biscuits (cookies US).  So I had a look around the raw food community to try to find something that would hit the chocolate 'Hobnobs' spot!

I didn't find anything that seemed to tease my taste buds, so I thought, 'I can make something myself'.
Here is what I came up with, and let me tell you, they are NOT going to last long in this house, my kids have tried them, and love them.

Ingredients:

Filling:
2/3 Cup of Oats
2/3 Cup of Dessicated Coconut
8 Dried Pitted Dates, or Medjool Dates (approx)
1 Teaspoon vanilla extract
1 Teaspoon Macca Powder (not essential, I just like to add it to snacks for a little more goodness)
1-2 Teaspoons Pure Maple Syrup
Pinch of Sea/Pink Himalayan Salt
1 Inch Chunk of Fresh Ginger, (skinned and finely chopped)
1 Teaspoon Ground Ginger.

Chocolate Coating:
1 Cup Raw Cacao Butter (if you grate it, it melts quicker)
Pinch of Sea/Pink Himalayan Salt
2 Tablespoons Pure Maple Syrup
2/3 Cup of Raw Cacao Powder.

Prepare a tray, cover with either baking paper or a silicon mat.

Method:
Add all of the FILLING ingredients EXCEPT the Maple Syrup, to a food processor, mix until it is all finely chopped and blended, like a crumble, now try to bind a small amount in your fingertips, if it holds well you will not need to add the Maple Syrup, if it is a bit loose, slowly add a teaspoon of syrup at a time until the mixture starts to bind well.
Now for a messy part..... take a teaspoon full of the mixture at a time in your hands and roll it into balls until all of the mixture is done.
Place them onto your baking paper/silicone mat.
Refrigerate them while you make the chocolate coating.

For the Chocolate Coating:
Put warm/hot (but not boiling) water into a large bowl or pan, about 1/3 of the bowl.  Now take the Raw Cacao Butter and place it into ANOTHER smaller bowl or jug, DO NOT PUT THE CACAO BUTTER INTO THE WATER.
Now, as you would use a Bain Marie, melt the cacao butter by placing its bowl into the warm water, as the smaller bowl slowly heats up, it will melt the butter. Stir it until all lumps have gone, and you have a liquid.
Now add the Sea/Pink Himalayan Salt, the Maple Syrup and the Raw Cacao Powder.  Stir it until it is smooth and free of lumps.

Another messy part.... take the biscuit balls out of the refrigerator and dip each one into the melted chocolate coating, cover each ball, waiting for the excess chocolate coating to drip off before placing it back onto your baking/silicone sheet.
Once each ball is covered, place them back into the refrigerator for about 1 hour to set.  
Once they have set, remove them from the sheet, and store in a container in the refrigerator for up to a week (pffft! lets be realistic here)

They wont last that long in our fridge, while I have been sitting here writing my blog, they have been demolished by the kids!!   I would hide some if I were you :D

You can omit the ginger if you prefer,  I made some plain ones, they are just as yummy.   You could get adventurous and add all sorts of things, blueberries, cherries, or even add cacao powder to make a double choc version.  The possibilities are endless.

Gluten Free Savory Snack

Got the Munchies?



Trying to stay healthy in a world flooded with sugar, gluten, E numbers and many more nasty additives, (too many to list) is proving very difficult, not to mention costly.

I love snacks, my kids love snacks, but I am finding it hard to find healthy, tasty snacks for us all that don't cost 4 times as much as the usual 'buy one bag of Monster Munch for a £1 and get 4 free'.
Ugh!

I did the normal morning routine this morning, I had my fresh green juice, and off I went on the school run feeling quite good.

By the time I had got home, I was STARVING!!

I am getting a bit tired of homemade waffles, which are delicious, but I fancied something savoury for a change. (Waffle Recipe on request)

So this is what I made, and I love them, so I thought I would share them with you. They are easy to make, quick, tasty, and CHEAP!!

So here is what you will need....

2 cups of Oats
1 cup of Rice Flour
2 Eggs
1 cup of Rice/Coconut Milk
Salt
Pepper
Garlic Granules
1 Tablespoon of Tamari/Soya Sauce
Half Cup of Grated Cheese
Coconut Oil

Put the Oats into a blender and blend until it has made flour.  Add the Rice Flour, Eggs, Milk, and Tamari Sauce.
Season with Salt, Pepper and Garlic Granules.
Blend until it is smooth, like a drop pancake batter. If it is too thick, add more milk, if it is too runny, add more rice flour.
Now add the Grated Cheese, Stir to mix in the cheese.
Heat a frying pan over a Medium-High heat. 
Melt about a quarter Teaspoon of Coconut oil, and pour in some of the batter, enough to make a small pancake, (like a large drop pancake)
Let it bubble up until the top is not runny anymore, and flip over to cook the other side.
Flip it a couple of times to ensure the 'pancake' is cooked through.
Turn out onto a chopping board and cut into triangles.
I love these on their own, but they are also nice with soup or as a snack with cherry tomatoes, carrot and cucumber sticks.
Delicious hot or cold.

Natural Remedy for Head Lice


It's that time of year again!



It is almost upon us. The fight against..........
HEAD LICE!!
I always use natural remedies, and this is the best one I have found...

2 Teaspoons of Tea Tree Oil
1 fl oz of natural shampoo/castile soap
3 tablespoons of Coconut Oil or Olive Oil

Tea tree essential oil is a natural insecticide, making it an effective treatment for head lice.
The oil and soap will suffocate the lice.
Mix the ingredients together.
Apply the solution gently throughout the hair and cover head with a shower cap or towel.
Leave head covered for a half an hour to an hour and then rinse thoroughly with warm water. (as warm as possible without burning)
Finally, comb hair while it is still wet with a nit comb to remove the dead lice.
Note: DO NOT apply tea tree oil directly to the scalp.
Repeat the treatment every 5-7 days until there are no more nits/lice.

Raw Chocolate Spread

So easy to make.....

Ready to eat in 5 minutes!



Are you ready for this?

Let's get straight into it...  If  you are anything like me, you do not want to wait too long for Chocolate!!

Ingredients:

2 Bananas
5 Tablespoons Raw Cacao Powder
2 Tablespoons Maple Syrup
1/4 Teaspoon Pink Himalayan Salt
1/4 Cup Coconut Milk
1 Tablespoon Coconut oil

Method:

Put all of the ingredients into a blender, (I use a Nutribullet)
Blend until smooth.
You can pop it in the fridge for a while if you prefer, but I couldn't wait that long.


I spread mine on rice crackers with sliced bananas or raspberries.



It will keep in the fridge for 3 days, but really, I don't think it will be around that long.

Nut Free Peanut Butter?

Yes, and it is yummy!


Just a quickie today.


I have a son that has a nut allergy, and most recipes I find on my quest for a healthier diet, contain nuts, or nut butters.


Well today I made a breakthrough!
My Yummy Salad
I hit gold!

As I always do around lunchtime, I set about making myself a tasty, nutritious meal.  I got my large salad ready (huge actually), and decided I would like a dressing, something cheesy, without the cheese.  
So I popped some ingredients into my blender, and out came this delicious treat, purely by mistake, but boy I am delighted.

'But what has this got to do with nut free peanut butter?' I hear you cry...  Well it tastes just like peanut butter and it looks just like smooth peanut butter.  BINGO!

I didn't make a cheesy dressing, but what I did make was so good, I just had to share it with you.

Ingredients:
1/4 cup of Sunflower Seeds
2 heaped tablespoons of Oat Flour
2-3 heaped table spoons of Nutritional Yeast
1 tablespoon of Paprika
A good pinch of Ground Black Pepper
1/2 teaspoon of Sea Salt or Pink Himalayan Salt
1/4 cup of Coconut Milk (add more later if you like it thinner)

Method:
Add all of the ingredients into a blender, (I used a Nutribullet with the small cup)
Blend for about 30 seconds, then scrape down the mixture and blend again for a further 30 seconds, or until you have the desired consistency, if you find that it is too thick, add a little more coconut milk and blend again.
Taste, and add a little more salt if needed.
I scrapped all of the 'Nutless Peanut Butter' out into a container and popped it in the fridge.  And with the remaining mixture in the blender, (I hate to waste anything) I added a little coconut milk and blended until the sides of the blender had no more mixture stuck on them, and I added this to my salad as my dressing.
DELICIOUS!

I had to try a little more of the 'Nutless Peanut Butter', so I grabbed a chili cracker that I made yesterday, and spread some on that, yum (do I say yum far too often?)

Crispy Chocolate Protein Thins

Oh Yummy, are you ready for a tasty treat that is also healthy, and vegan?

You are going to love these!

First I had lunch..
Boiled egg, rice crackers, Quorn ham style slices and salad
The tomato dressing is yummmmmm!  I will post that another day.
  
I have been trying to cut out junk food, and stick to a healthy diet for quiet a while now, but one thing I struggle with is snacking out!!    

I simply love treats, all things chocolate and yummy.  You can probably guess that it is not easy having a sweet tooth when you are trying to be healthy, and so I started searching for inspiration for yummy healthy snacks, ones that hit the spot, but don't add inches to my hips, or a guilty feeling in my gut.

I came up with these, Chocolate thins, I was messing about with some ingredients that I had in the cupboard, and they turned out to be a real hit in the household.   I have 2 very hungry children, they never seem to stop snacking out, and apples were getting a bit boring for them.

Here is what I used....

INGREDIENTS LIST
1 Cup dried dates
1 Cup of Oats
1/2 cup of Sunflower Seeds
1/4 Cup of Chia Seeds
1 Tablespoon of Hemp Protein Powder
-
1 Large Banana Mashed
1 Teaspoon of Macca Powder
1 Tablespoon of Coconut Oil
1 Tablespoon of Coconut Palm Sugar
1/2 Teaspoon of Pink Himalayan Salt or Sea Salt
2 Heaped Tablespoons of Raw Cacao Powder.

First, put the oven on to 150C/300F/gas mark 2. Put the shelf just above the middle of the oven.

Now pop the Oats, Dates and Sunflower seeds and Hemp powder into a blender (Nutribullet if you have one) and blend until they resemble breadcrumbs.

Put the mashed Banana into a bowl, and add all of the other ingredients, including the blended Oats mixture.

Mix until everything is combined well.

Now on a baking sheet, put a silicon mat, or a non stick paper, just make sure it is non stick, as the mixture may stick to paper as it bakes.

Thinly spread the mixture out on the sheet, as thin as you can, and pop it into the oven for about 10 mins.

Remove it after 10 mins, it should now be easier to roll out, as it should have dried out a little bit and loose its stickiness, roll it out a little thinner with a rolling pin.  Pop it back in the oven for another 10-15 mins.

Remover from the oven and cut it into small squares while it is still hot, if you leave it until it is cold it will probably break up and be a big mess.

Now if you can, leave to cool, they will crisp up a little more, and they are DELICIOUS!!! 

Please remember, they are a TREAT, and not to be eaten in bulk, as tempting as it may be, the raw cacao in these will give you a boost, and in my experience, if you eat too many, you will get a little bit too much of a buzz ha ha ha!!

What to do? dealing with poop!

DEALING WITH POOP


Picture a happy scene, you are skipping along, the weather is perfect, you have had a lovely morning and then, suddenly, a big pile of stinky, steaming poop lands on your lap!





How do you respond?
Well here is a lesson for you all.  Not that I am an expert on life, but I certainly know what makes me happy, what is worth fighting for, and what is not worth my time, energy and health.

Let's first look at the poop!  What is it good for?   Well, depending on what animal it comes from, it can be great for the garden, but it can also be toxic and good for nothing.

So, determine what good can come from it?  Can it go on your garden, feed your crops and help to grow good strong plants for your enjoyment, or will it make you ill?
Can you get stronger from said 'poop', or weaker?

Once you have determined if it is worth using or not, then you decide what to do with it. Throw it on your garden, or in the bin.
In other words, can you grow stronger from that steaming pile of poop, or will it only serve to make you ill, ruin your day, and days to come, and make you very unhappy?

Once you have realized what it is worth, DEAL WITH IT APPROPRIATELY.  

You and only you have the power to do what is needed to make your life happy again, to either 'use' the poop, or let it go.   And when I say 'use' it, I do not mean chew on it for days, because everyone knows, you will not enjoy chewing on poop, nor will it do you any good! Yuk!

What I do mean though, is learn from it, use that pile of unwelcome, stinking poop for good, see what good has or could come from it, and WRITE THE POSITIVES DOWN, keep them as a reminder. THROW THE REST AWAY, for good.

Now, some people are like flies, they like to fly around poop all day, seeing what it smells like and regurgitating it over and over.                                                                                       It seems to satisfy them.

I am sure you are not one of these people, and if you are anything like me, you will not enjoy a poop chewing, poop vomiting creature flitting around you all day.   

Which leads me to your next step to happiness..... SWAT THEM AWAY,  they are destructive and useless, they spread illness wherever they land.

You do not need that, so, take a look at the flies in your life and get rid, or at least limit the time you spend around them and their joy sapping influence.

Right, so you have examined the poop, sifted out the good stuff, if any, and thrown the rest away, along with the flies buzzing around it.
Now, wash your hands, and everything it has touched, get it out of your hair so-to-speak. 
There will not be anything good come from chewing it over again, you have thrown it out, now get rid of all traces, and if the poop smell drifts back in, just close that window, and fill the room with another, more pleasant aroma..  In other words, STOP THINKING ABOUT IT, and fill your mind with good positive things.   

Get old photo albums out, put on some music that takes you back to happier days. Do something you really enjoy, make something, or go someplace nice.









Just be sure to get that stink out of your system, and pretty soon, you will be back on your road to happiness again.

And remember, people will throw poop at you again and again.  If you know where the poop is coming from, STOP GOING THERE!!
And if an unexpected pile of poop lands on you, just go through these same processes again.

One thing I have learnt is....Look at your OWN life.   Don't look in the mirror, and then go and tell someone else how to clean up THEIR poop, just deal with YOUR OWN.  If someone genuinely wants help cleaning up their poop, and you can cope with it, then by all means go for it, but don't interfere with other peoples poop, and don't waste your time, energy, health and happiness trying to please the poop throwers, it is a useless exercise that will only end up in exhaustion. 


And when people with poop all over their lives come to you to tell you how to clean up, SMILE, AND WALK AWAY.

I live near Peterborough UK and have had my kefir grains for a few months, they are organic and have only been used with organic whole milk.

For those that know the nature of Kefir, you will be aware that these multiply when happy, and I have way too many now.

Jaffa Drizzle Cake



Another yummy treat for you to try.
I use all organic ingredients where possible.

INGREDIENTS

140g Butter, nice and soft
200g Self-raising flour
1 teaspoon of Baking Powder
200g sugar
3 Large eggs
6 Tablespoons of Milk
Zest of 2 Large Oranges finely grated

 TO FINISH

6 Tablespoons of Orange juice
100g sugar
100g Dark Chocolate

METHOD

1. Heat the oven to 180C/fan oven 160C/gas.4. 
Butter and line with grease proof paper the base of a 1.2-Lt loaf tin. 
Put all of the cake ingredients into a bowl and beat with a hand whisk or wooden spoon for 3-5 mins, until light and fluffy. 
Spoon the mixture into the tin and level the top.

2. Bake for 40-50 mins, until the top is golden brown and firm to touch, you can also do the 'knife test' just to make sure the center is cooked. 
Meanwhile, heat the orange juice and the sugar gently in a small pan, stirring until the sugar is dissolved. 
When the cake is cooked, remove it from the oven and spoon the orange juice mixture over the cake. 
Leave to cool IN THE TIN until safe to touch, then remove and cool completely on a wire rack.

3. Break up the chocolate and melt it in a bowl over another bowl/saucepan of hot water. 
Drizzle this lovely stuff over your cake either using a spoon and a side to side motion, creating a drizzled affect, or just pour it on and let it cool to a thin layer.

Now cut yourself a slice and sit back and enjoy.

Heard of EFT?

It seems a bit odd, but oh well, lets try it!


Have any of you heard of EFT? Emotional Freedom Techniques?  Or Tapping? No neither had I, until I watched a film about it on Food Matters TV .
The film is called The Tapping Solution.

Can I tell you that I was very very sceptical when I started to watch it, the reason being, it looks and sounds crazy, and I am very wary of anything that leans toward the 'spiritual' when it comes to alternative therapies. 
So, as you can imagine, I did not take to this too quickly, but let me say that soon it became very clear that this was a physical and emotional therapy and not anything spiritual.  
It started to make real sense the more I watched...
The easiest way to describe it is, talking to yourself about how you feel, while tapping on pressure points on your body, they are called meridian points if I remember correctly.
Studies at Harvard Medical School have revealed that by stimulating the body’s meridian points – the same spots on your body that are manipulated by acupuncturists – you can significantly reduce activity in a part of your brain called the amygdala. 

And the way I can understand how it works is that you learn to suppress emotion from an early age, and to bury the pain associated with it, and tapping changes the signals to the brain regarding the pain and the emotion surrounding such pains, thus releasing trapped emotion and eliminating the pain connected to that emotion.
'Right, I am going to give it a go', I thought to myself as I sat watching, so, as the people on the video tapped, I started, and within seconds I was crying!!!  I do not find it easy to cry, so this shocked me, I stopped at once, and shoved those emotions down back where they came from, I didn't like that at all, and was so confused as to why they came up, I was not even talking about anything emotional!!
I continued to watch the video and it was explained that this release of emotion was very very common, and we should not bury them, as this is what we have done for too long, which has resulted in pains in our bodies.
So I decided to give it another go, and sure enough, within seconds I was crying again, and I mean really crying, but I continued, tapping and talking it out to myself.
I started to feel things from my past that I had buried, things that I hated to talk about, even think about, but I was determined to carry this thing on to see what happened.
Now at this point can I just stop and tell you that I am a very strong person, and to do this is so foreign to me, I have always tended to fight through emotion and push ahead regardless of pain, I have always thought that you should just deal with it, and by deal with it, I mean bury it and move on.  Well, it seems that by doing so I have caused myself a lot of grief which has lead to illness.
I continue..
I tapped and talked about ONE thing that has upset me for years from my past, one moment that happened that hurt me, and I tapped it out.
It actually made me felt better, not only physically, but emotionally too, a kind of freshness I cant really explain, but I felt lighter somehow.
Well, I don't know if it was working or it was just psychological, but I felt better, and I am going to do more, 
That was the first time I had done it, and being a sceptic, I am not going to jump up and be an advocate for tapping, I am just going to do it again and again and see what happens.
I wanted to share it with you because it is part of my progress toward getting to grips with loving myself.

Upcycle idea

Up-cycle an old box


I don't know about you, but I just love looking through other blogs that people have done and seeing how they make things, whether it be recipes for homemade bread, or a new way to use coconut oil, different crafting suggestions, even how to recycle old clothing.   
I am always looking for new ideas.
Most of the time I am sitting with my 5 year old daughter, who is also crazy about all things creative, especially crafting.
While we were looking through a few videos, we came across one on how to decorate a plain box and make it into a cute trinket box.

We love to recycle and up-cycle, and so we started to search the house for a box to decorate, Moo found this pretty box which she had scribbled on previously, it was the ideal candidate for a make-over, and so we began.....
This is what the inside of the box looks like, we didn't want to change anything about it, we think it is quite nice as it is..
So, first of all we had a look through our arts and craft supplies, we wanted some sort of material to cover the box and found a nice piece of pink felt, It has to be pink, Moo is a true girlie girl and nothing else would do LOL
Now we made sure it was big enough, measured the width and length of the box and cut to size using a ruler and a sharp craft knife. (please take care when doing this, those knifes really are very sharp)
Once we had the piece ready we plugged in the glue gun, made sure we had enough spare glue sticks and waited for it to heat up. 
While we waited, we got out the tins of ribbon scraps and beads, embellishments, and anything else that we thought would look good on the box.
We found some nice cotton ribbon that we liked, and a few other bits, and started by sticking the ribbon around the edge of the box with the glue gun.
A good tip is to add a little glue and place a little of the ribbon at a time, if you try to add a whole line of glue, it will probably have dried hard before you get the ribbon stuck to it.
Once we had the ribbon on, we glued on the felt.
Looks a little messy, but not to worry, we are going to cover it with embellishments.
And really this is the fun part!! 
We placed flowers and butterflies on the lid to see what they looked like, when we were happy, we glued on the first layer, its good to try and think about your layers before you start to glue, you don't want to just glue any old how, as you will find that you want some bits under and some on top of others, does that make sense??
We started with the small sequin flowers for the edge of the box..

Already looks better, but lets keep adding...
We layered the flowers before adding them to the box, that was just to make sure that we were happy with the flower before it was a permanent fixture.




The centre of the flowers were a little plain for us, so we popped in either beads or a few gems to brighten it up a bit.
On the front we used some small clay flowers that I had. We left a big enough gap at the front to add something else, once we had finished, but we were not sure what yet...
Now we were happy with the overall look, we wanted to finish it off, add a few little extras...
We love the little dragonfly in the bottom right corner.



So there it is, all finishing touches added, a fabric heart on the very front, a handmade cotton ribbon flower on the top along with a butterfly and a few other little bits.
And I am sorry, but I forgot to take a picture of the back, but we added a couple of small butterflies there too.

Moo loves her new box, she had chickenpox when we took the pictures, and so covered up her face to hide them, bless!!!!

Time for change!

I accept myself unconditionally right now!

Or in other words, 'I am completely happy with the person I am right now!'

Do you know how hard it is for me to say these words?  In fact I can't say them, I find it hard just thinking it is OK to write them.
Am I alone in that?  I don't think I am.

I saw an image the other day, and casually commented on it, I said 'I have never done this'.
What I put really impacted on me, I had to think about it, 'why have I never done this?' 
Well, because of years of practise I dismissed my thoughts, and hoped that those disturbing thoughts would go away and I would be OK.  
Until I saw a film called 'Hungry for change', 
I wanted to watch it because of my health, I have an illness that will not go away according to doctors, and I have to just learn how to live with it, but it is so hard to live with, and I feel that I can fight it, and so I wanted to see if there is anything I am missing from my already very healthy diet.
I drink fresh organic juice every day, I eat food that is real, I avoid highly processed high sugar or sweetened foods, I drink plenty of water and herbal tea. But I am still not well.
I watched all the way through the film, writing down helpful tips, and thinking 'I am doing so much of what they say, why am I still so ill!!!?'


And then came the last part of the film, the wrecking ball!!   BOOOM!!  right in between my eyes
..... You need a positive mental image of yourself to actually move forward to good health, it talked about learning to tell yourself that you are wonderful,
PFFFFTTTT!!!!! HA HA HA HA HA HA HA!!!! Oh boy! something so foreign to me.

I started to cry, the realisation that I do not love myself, or actually think much of myself at all, in fact, if I met myself, I would not want to be my friend.
 It hit me so hard.

I won't go into details, as this is not the reason for my blog, but I decided to take each negative thought that I have of myself and deal with each one with a positive.

'You are fat'......'You look great for someone that has had 3 kids'

'You made some really bad choices'.........'Look at what you have learnt'

'You are a rubbish Mum'...........'You have 3 amazing kids, you must be doing something right'

And the list goes on, and continues to do so.


The film said, that you need to fill up your mind with positives. And so,
I have decided to go through my old pictures and find a picture of myself that I like (it might take a while) and pin it to my mirror, along with the words 'I am completely happy with the person I am right now
I will take a look at it at least twice a day, look into my own eyes for 20 seconds, ignore every negative thought that pops into my head, and they will come, thick and fast, and Say out loud, 'I AM COMPLETELY HAPPY WITH THE PERSON I AM RIGHT NOW'

I am going to prove to myself one way or another that I am lovely, I am, I will!!  
I really need to do this, I need to be happy, healthy, and pass this onto my loved ones.

I am going to post as often as I can to chart my progress, you may not care, you may not relate to this at all, but for those who do, and feel the same low self esteem, this is me, being a guinea pig for you, and if it works, I hope it is something that you can benefit from, and if it does not work, well, you can see where I go from here,
