Jaffa Drizzle Cake



Another yummy treat for you to try.
I use all organic ingredients where possible.

INGREDIENTS

140g Butter, nice and soft
200g Self-raising flour
1 teaspoon of Baking Powder
200g sugar
3 Large eggs
6 Tablespoons of Milk
Zest of 2 Large Oranges finely grated

 TO FINISH

6 Tablespoons of Orange juice
100g sugar
100g Dark Chocolate

METHOD

1. Heat the oven to 180C/fan oven 160C/gas.4. 
Butter and line with grease proof paper the base of a 1.2-Lt loaf tin. 
Put all of the cake ingredients into a bowl and beat with a hand whisk or wooden spoon for 3-5 mins, until light and fluffy. 
Spoon the mixture into the tin and level the top.

2. Bake for 40-50 mins, until the top is golden brown and firm to touch, you can also do the 'knife test' just to make sure the center is cooked. 
Meanwhile, heat the orange juice and the sugar gently in a small pan, stirring until the sugar is dissolved. 
When the cake is cooked, remove it from the oven and spoon the orange juice mixture over the cake. 
Leave to cool IN THE TIN until safe to touch, then remove and cool completely on a wire rack.

3. Break up the chocolate and melt it in a bowl over another bowl/saucepan of hot water. 
Drizzle this lovely stuff over your cake either using a spoon and a side to side motion, creating a drizzled affect, or just pour it on and let it cool to a thin layer.

Now cut yourself a slice and sit back and enjoy.
